Hot Cross Buns are a traditional Easter pastry enjoyed by many. Originating from the UK, these sweet, spiced buns are marked with a cross on top. They are typically made with raisins or currants and flavoured with cinnamon and nutmeg, but you can get creative with the family! Hot Cross Buns are often enjoyed on Good Friday, and their rich history adds a touch of tradition to Easter celebrations.

These delightful buns are the perfect combination of soft, fluffy dough and a sweet, spiced flavour that will leave you craving more. Made with love and a hint of tradition, our hot cross buns are the ideal treat to share with family and friends during this festive time of year. So why wait? OVERVIEW

Skill Level: Intermediate

Time: Approximately 2 hours total of preparation & bake time

Serves: Approximately 12 buns

INGREDIENTS

Hot Cross Buns

  • 600 grams of 14g Dried Yeast
  • 800 grams of Milk, lukewarm
  • 145 grams of Bakers Flour 
  • Table Salt
  • 3x whole eggs
  • 60 grams of Mixed Spice
  • 20 grams Ground Cinnamon 
  • 120 grams of Unsalted Butter
  • 200 grams of Sultanas, Raisins, & Currants (evenly mixed) 
  • Zest of an Orange

Bun Glaze

  • 250 grams Brown Sugar
  • 200 ml Water

Add both ingredients to a heavy-based pot, bring to a boil and cook until starting to thicken. Make this syrup the day before, and reserve it in the fridge in a sealed container.

Cross Mix

  • 125 grams Flour
  • 125 grams Water

Mix in bowl until a thick paste, transfer to piping bag and reserve

METHOD

Combine flour, yeast, sugar, spices, and salt in a mixing bowl on a benchtop kitchen aid or electric mixer. Add butter, lukewarm milk, whole eggs, and dried fruits.

Mix for 5 minutes until a smooth elastic dough forms. Start at a low speed until combined, then increase to a higher mixing speed.

After 1 minute, add more flour, if required, just enough so the dough comes away from the side of the bowl.

Let dough rest in a warm space covered for 30 minutes.

Knock the dough back and weigh 80g balls, transferring to an oven tray.

Allow to prove in a warm space for another 30-45 minutes until the dough has roughly doubled in size.

Pipe cross mix over buns and bake for 18-25 minutes. Brush buns with Bun Glaze straight from the oven.
